Puerto Rico Punch with Don Q Gold

This just might be the only recipe in Sunshine Tiki's tool kit that uses just a single gold rum.  Why?  Generally gold rums are great for mixing but not for enjoying on their own.  Tiki drinks are fine with a single dark rum but those are really about the mint and fresh citrus.  Don Q Gold is a very nice upgrade to your usual Puerto Rican rum.  The aroma is slightly burnt with a touch of sugar,  and the finish is dry to lightly sweet.  Lets make punch!

Puerto Rico Punch

2 ounces Don Q Gold

1.5 ounces Pineapple Juice

1 ounce fresh Lime Juice

.5 ounce falernum*

.5 ounce Passion fruit syrup

1 dash Grapefruit bitters (optional)

Shake all ingredient together with ice in a shaker.  Strain into fancy glass filled with crushed ice.  Garnish with pineapple, lime and parasol.  The tartness of limes vary from season to season and variety.  Balance the tartness of this punch by adding a little more passion fruit syrup if needed.
