Ginger Down Under
/Some drinks are crafted on a dare. Thats how this cocktail started. In conversation Sunshine was tasked with mixing kiwi and banana along with a rum with strong character. Figuring out how to get kiwi and banana to mix together without creating a thick mess was the trick. Using an immersion blender to make the fruit puree is very helpful but a strong standard blender will do the job.
2 oz. Bunderberg Overproof Dark Rum
3 oz. Kiwi Banana mix*
.5 oz. Dry Orange Curacao
Ginger Beer to top with
Combine everything but ginger beer in a mixing glass with ice. Stir very well. Pour into a fancy glass. Top with ginger beer, about 3 ounces. Garnish with kiwi and banana. Add an Australian flag pick for extra flare.
Kiwi Banana Mix: In a blender combine one peeled banana in chunks with three kiwis peeled and cut into chunks. Add 4 ounces lime cordial (equal parts lime juice and white sugar, stirred until dissolved). Blend until creamy. Add slightly more lime juice until mixture easily pours. Use any overproof dark rum if you cannot find Bundaberg.
