Every tiki bar needs a few mocktails. Prior to recording episode 474 of Zen Tiki Lounge, Starshine asked for a mocktail so that she could be as dry as possible in January. The Insurrection was crafted on January 6th, so the name just kind of happened. The art for this beverage was made using an AI app that Sunshine has been playing with. Its pretty close to reality, though the foam is a bit too thick and intense. We will keep playing with this to see if we can get some cocktail inspirations based on AI generated pictures.

Bonus! Add 1.5 to 2oz of a nice light sliver rum to this virgin drink and it gets even more fun.

2oz Fresh OJ

2oz Pineapple Juice

.5oz Fresh Lime Juice

2oz Constant Comment Tea*

.5oz Simple Syrup

2 Dashes Fee Foam or Aquafaba

*Start by brewing the tea. Constant Comment is a classic tea from Celestial Seasonings. You can substitute with another orange/spice black tea. Steep two tea bags in 1 cup boiling water for just 3 minutes to prevent bitterness.

Combine all ingredients in a shaker with ice. Shake very well to develop the foam. Strain into coupe or other “up” style cocktail glass. Garnish with orange wheel and mint.
