Chinese Sandman

After returning from a weekend long event which included a total non observance period of world events, we were overwhelmed by current events and the state of the US democracy.  In response to this "feeling", we created this cocktail using fresh citrus, mint, ginger and plenty of rum.  If you seek a place of relaxing contemplation you may want to try Chinese Sandman.  For those who imbibe before bed time, this may be the drink for you.  Potent enough to sedate and just sweet enough to hit you like an end of day dessert.

1 oz Zaya Rum

.75 oz Lemon Hart 151 

1.5 ounces Citrus Tea Syrup*

.5 ounce fresh Lime juice

What?  Just four ingredients?  Yes.  The Citrus Tea Syrup is an handful of flavors all in one mix.  So, you don't need much else besides rum, lime and syrup.  Combine all ingredients in a shaker with ice.  Shake very well and strain into a glass filled with crushed ice.  Garnish with mint sprig and orange moon.  

*Citrus Tea Syrup: In a saucepan combine the zest of 1 large orange, 1 large lemon and the juice of the orange and juice of two large lemons.  Add 1/2 cup of water and 4 tablespoons of orange marmalade.  Bring to a simmer.  Add the contents of 4 Tazo Green Ginger tea bags and simmer for another minute stirring constantly.  (Can't find Tazo Green Ginger, try two ginger tea bags and two green tea with mint tea bags, cutting open and adding just the tea) Turn off heat and cover.  Allow to rest for 10 minutes.  Carefully taste the syrup.  It should be more sour than sweet with obvious ginger and mint aromas.  Strain the syrup through a reusable coffee filter or several layers of cheesecloth.  Store in glass container in the refrigerator for up to 14 days.
